One-Pot Cajun Shrimp and Sausage Pasta

8 oz penne pasta

1 lb shrimp, peeled and deveined

1 lb smoked sausage (Andouille or your choice), sliced

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (red or green)

1 can (14.5 oz) diced tomatoes, with juices

4 cups chicken broth

1 cup heavy cream

2 tablespoons Cajun seasoning

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Sausage: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the sliced sausage and sauté for about 5-7 minutes until browned. Remove the sausage and set aside.

    Cook the Vegetables: In the same pot, add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are tender, approximately 3-4 minutes.

      Add the Spices: Stir in the Cajun seasoning, paprika, and oregano. Cook for an additional minute until fragrant.

        Combine Ingredients: Add the shrimp, cooked sausage, diced tomatoes (with juices), penne pasta, and chicken broth to the pot. Stir well to combine everything.

          Cook the Pasta: Bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 15-20 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

            Finish with Cream: Once the pasta is cooked, stir in the heavy cream. Cook for an additional 2-3 minutes on low heat to combine and thicken the sauce. Season with salt and pepper to taste.

              Garnish and Serve: Remove from heat and garnish with sliced green onions and chopped parsley. Serve hot and enjoy your flavorful one-pot meal!
