1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 cup uncooked long-grain white rice

1 can (15 oz) diced tomatoes, undrained

2 cups beef broth

1 cup frozen mixed vegetables (peas, carrots, corn)

2 teaspoons Italian seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large pot or Dutch oven, over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.

    Sauté Vegetables: Add chopped onion and minced garlic to the pot with the beef. Sauté for about 3-4 minutes until the onion is translucent.

      Add Rice and Seasoning: Stir in the uncooked rice, Italian seasoning, smoked paprika, salt, and pepper. Cook for 1-2 minutes to toast the rice slightly.

        Combine Ingredients: Pour in the diced tomatoes (with their juice) and beef broth. Add the frozen mixed vegetables and stir to combine well.

          Cook the Casserole: Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 18-20 minutes, or until rice is tender and liquid is absorbed.

            Add Cheese: Once the rice is fully cooked, sprinkle the shredded cheddar cheese over the top, cover, and let it sit for another 5 minutes until the cheese is melted.

              Garnish and Serve: Remove from heat, fluff the casserole with a fork, and garnish with fresh parsley before serving.
