Ingredients

1 lb (450g) potato gnocchi

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1/2 cup grated Parmesan cheese, plus extra for serving

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions

Sauté the Garlic: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add the Tomatoes: Toss in the halved cherry tomatoes and cook for an additional 2-3 minutes until they begin to soften.

Combine Ingredients: Stir in the heavy cream and basil pesto, mixing well to combine. Bring the mixture to a gentle simmer.

Cook the Gnocchi: Add the potato gnocchi to the pot and cook, stirring occasionally, for about 3-5 minutes, or until the gnocchi rise to the surface and are tender.

Incorporate Spinach and Cheese: Once the gnocchi are cooked, gently fold in the chopped spinach and grated Parmesan cheese. Season with salt and pepper to taste. Cook for an additional 1-2 minutes until the spinach is wilted and the cheese is melted.

Serve: Remove from heat and serve immediately, garnishing with extra Parmesan cheese and fresh basil leaves, if desired. Enjoy your creamy, comforting dish!
