1 medium onion, chopped

3 cloves garlic, minced

1 carrot, diced

2 cans (14.5 oz each) diced tomatoes (with juices)

1 cup vegetable or chicken broth

1 teaspoon dried oregano

1 teaspoon sugar (to balance acidity)

Salt and pepper to taste

1 cup heavy cream or coconut cream for a vegan option

1 cup fresh basil leaves, chopped (plus extra for garnish)

½ cup grated Parmesan cheese (optional, for extra creaminess)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrot, and a pinch of salt. Sauté until the onion becomes translucent and soft, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
