1 lb boneless, skinless chicken breasts, diced

1 cup long-grain white rice, rinsed

1 can (10 oz) diced tomatoes with green chiles

1 can (16 oz) queso cheese sauce

1 medium onion, diced

2 cloves garlic, minced

1 cup chicken broth

1 cup corn kernels (fresh or frozen)

1 tsp cumin

1 tsp paprika

1 tsp chili powder

Salt and pepper, to taste

1 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sauté the Chicken: In a large pot, heat the olive oil over medium-high heat. Add the diced chicken, season with salt, pepper, cumin, paprika, and chili powder. Sauté until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook the Veggies: In the same pot, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent.

      Add the Rice: Stir in the rinsed rice and cook for an additional minute to toast the rice slightly, stirring frequently.

        Combine Ingredients: Pour in the chicken broth, diced tomatoes with green chiles (with juices), corn kernels, and the queso cheese sauce. Stir well to combine.

          Bring to a Simmer: Add the cooked chicken back into the pot. Bring the mixture to a gentle simmer, then reduce the heat to low, cover the pot, and let it cook for about 20 minutes, or until the rice is tender and the liquid is absorbed.
