1 pound baby carrots (or regular carrots, peeled and cut into sticks)

2 tablespoons olive oil

1/4 cup honey

1/4 cup freshly squeezed orange juice

Zest of 1 orange

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons unsalted butter

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C). This will ensure your carrots roast perfectly.

    Prepare the Carrots: If using regular carrots, cut them into evenly sized sticks (about 1/2 inch thick). If using baby carrots, you can leave them whole.

      Make the Glaze: In a medium bowl, whisk together the olive oil, honey, orange juice, orange zest, ground cinnamon, salt, and black pepper until well combined.

        Combine the Carrots and Glaze: Place the carrots in a large mixing bowl. Pour the orange honey glaze over the carrots and toss until they are evenly coated.

          Roasting: Line a baking sheet with parchment paper for easy clean-up. Spread the glazed carrots in a single layer on the baking sheet. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the carrots are tender and caramelized.

            Add Butter: With about 5 minutes left, pull the carrots from the oven and dot them with small pieces of unsalted butter, then return to the oven to finish roasting.

              Serve: Once the carrots are beautifully glazed and tender, remove them from the oven. Transfer to a serving dish and garnish with chopped fresh parsley for a pop of color.
