1 package (14.3 oz) Oreo cookies

8 oz cream cheese, softened

1 cup semi-sweet chocolate chips

1 tablespoon coconut oil (optional, for smoother chocolate)

Extra crushed Oreo cookies for rolling (optional)

Sprinkles or white chocolate for drizzling (optional)

Instructions
 

Crush the Oreos: In a food processor, blend the Oreo cookies until they turn into fine crumbs. If you don’t have a food processor, you can place the cookies in a zip-top bag and crush them with a rolling pin.

    Mix with Cream Cheese: In a large mixing bowl, combine the crushed Oreo crumbs and softened cream cheese. Use a spatula or your hands to mix until a smooth, dough-like consistency forms.

      Shape the Truffles: Scoop out about 1 tablespoon of the mixture and roll it into balls, placing them on a baking sheet lined with parchment paper. Continue this until all the dough is shaped into truffles.

        Chill: Place the baking sheet in the refrigerator for about 30 minutes, or until the truffles are firm.

          Melt the Chocolate: While the truffles are chilling, melt the semi-sweet chocolate chips and coconut oil together in a microwave-safe bowl. Heat in 30-second intervals, stirring in between, until completely melted and smooth.

            Coat the Truffles: Remove the truffles from the refrigerator. Using a fork, dip each truffle into the melted chocolate, allowing any excess chocolate to drip off before placing them back on the parchment-lined sheet.
