Peach & Brie Puff Pastry Tarts

Ingredients
  

1 sheet of puff pastry, thawed

2 medium ripe peaches, sliced

200g (7 oz) Brie cheese, cut into small pieces

2 tablespoons honey

2 teaspoons fresh thyme leaves (plus extra for garnish)

1 egg, beaten (for egg wash)

1 tablespoon brown sugar (optional)

Pinch of salt

Flour, for dusting

Preheat the Oven:

    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      Prepare the Puff Pastry:

        On a lightly floured surface, roll out the thawed puff pastry into a large rectangle. Cut the pastry into squares or circles (around 4x4 inches or 5-inch circles). Transfer the pastry to the prepared baking sheet.

          Create a Border:

            Using a sharp knife, gently score a smaller square or circle about half an inch in from the edges of each pastry piece. Be careful not to cut all the way through. This will help create a raised border during baking.

              Assemble the Tarts:

                Inside the scored border, place pieces of Brie evenly among the tarts. Layer the sliced peaches on top of the Brie. Drizzle honey over the peaches and sprinkle with fresh thyme leaves and a pinch of salt. For an extra touch of sweetness, you can sprinkle a bit of brown sugar on top if desired.

                  Apply the Egg Wash:

                    Brush the edges of the puff pastry with the beaten egg to give it a golden finish when baked.

                      Bake:

                        Bake in the preheated oven for about 20-25 minutes, or until the puff pastry is golden brown and puffed up, and the cheese is melted.

                          Finish and Serve:

                            Once baked, remove from the oven and let cool for a few minutes. Garnish with additional fresh thyme before serving. These tarts are best enjoyed warm!
