2 tbsp lemon juice

1 tbsp cornstarch

1 tbsp unsalted butter, melted

1 tbsp baking powder

1/4 tsp salt

1/2 cup milk

1/4 cup brown sugar

2 cups vanilla ice cream (homemade or store-bought)

Instructions
 

Make the Peach Filling:

    - In a mixing bowl, combine the sliced peaches with granulated sugar, cinnamon, lemon juice, and cornstarch. Toss until the peaches are well-coated. Set aside to marinate for about 15 minutes.

      Prepare the Cobbler Batter:

        - Preheat your oven to 350°F (175°C).

          - In a large bowl, whisk together flour, baking powder, salt, and brown sugar.

            - Gradually add milk and melted butter, stirring until just combined. The batter should be thick.

              Assemble the Cobbler:

                - Pour the batter into a greased 8x8-inch baking dish.
