Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1/2 cup buttermilk (or plain yogurt)

1 1/2 cups fresh peaches, peeled and diced (about 2 medium peaches)

Optional: 1/4 cup chopped pecans or walnuts for extra crunch

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease with cooking spray.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon. Whisk together until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth.

Combine the Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold the mixture with a spatula until just combined. Do not overmix; a few lumps are okay.

Add the Peaches: Carefully fold in the diced peaches and, if using, the nuts. Make sure the peaches are evenly distributed throughout the batter.

Fill the Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. This will allow room for the muffins to rise.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
