Peach Quesadillas

2 ripe peaches, sliced

1 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1 tablespoon honey

1/2 teaspoon cinnamon

4 large flour tortillas

2 tablespoons butter, divided

Fresh mint leaves (for garnish, optional)

Optional: a sprinkle of powdered sugar for serving

Instructions
 

Prepare the Filling: In a bowl, combine the softened cream cheese, honey, and cinnamon. Mix well until smooth and creamy.

    Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Spread a generous layer of the cream cheese mixture over one half of the tortilla. Layer with sliced peaches and sprinkle a quarter of the mozzarella cheese over the peaches. Fold the tortilla in half to seal the filling.

      Cook the Quesadillas: In a large skillet, heat 1 tablespoon of butter over medium heat. Once melted, place the folded quesadilla in the skillet. Cook for 3-4 minutes on one side until golden brown and crispy. Carefully flip and add the remaining tablespoon of butter to the pan. Cook for another 3-4 minutes on the other side.

        Repeat: Repeat the process with the remaining tortillas and filling until all quesadillas are cooked.

          Serve: Cut the quesadillas into wedges and arrange them on a serving platter. Garnish with fresh mint leaves and a sprinkle of powdered sugar if desired. Serve warm and enjoy a delightful blend of sweet and savory flavors!
