Peanut Butter and Jelly Bars

1 cup creamy peanut butter (or chunky for extra texture)

½ cup honey or maple syrup

1 teaspoon vanilla extract

2 cups rolled oats

½ teaspoon baking powder

¼ teaspoon salt

½ cup chopped nuts (e.g., almonds or walnuts) - optional

1 cup fruit jam or preserves (strawberry, raspberry, or grape work well)

¼ cup chocolate chips (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix the Wet Ingredients: In a large mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.

      Combine Dry Ingredients: In another bowl, mix together the rolled oats, baking powder, and salt. If you're adding chopped nuts, incorporate them into this mixture.

        Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, stirring until fully combined. The mixture will be thick – that's normal!

          Spread the Mixture: Pour half of the oat mixture into the prepared baking dish. Use a spatula to evenly spread and press it down firmly.

            Add the Layer of Jam: Spoon the fruit jam over the pressed oat layer, spreading it out evenly. Make sure to leave some space at the edges to prevent it from boiling over while baking.

              Top with Remaining Oats: Take the remaining oat mixture and crumble it on top of the jam layer, pressing it down lightly.

                Optional Chocolate Topping: If using, sprinkle chocolate chips over the top layer for added sweetness and flavor.

                  Bake: Place the bars in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown.

                    Cool and Slice: Once baked, remove from the oven and allow the bars to cool in the pan for about 10 minutes. Using the parchment overhang, lift the bars out of the pan and place them on a wire rack to cool completely before slicing into squares or rectangles.
