Ingredients

1 cup ripe bananas, mashed (about 2 medium bananas)

1/2 cup natural peanut butter (smooth or crunchy)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup protein powder (vanilla or unflavored)

1/4 cup chopped nuts (almonds, walnuts, or pecans)

1/4 cup chocolate chips (optional)

1/4 teaspoon salt

1/2 teaspoon cinnamon (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Mash the Bananas: In a large mixing bowl, mash the ripe bananas with a fork until smooth. You should have about 1 cup of mashed banana.

Mix Wet Ingredients: Add the peanut butter, honey (or maple syrup), and vanilla extract to the mashed bananas. Stir until well combined and creamy.

Combine Dry Ingredients: In another bowl, whisk together the rolled oats, protein powder, salt, and cinnamon (if using) until evenly mixed.

Combine All Ingredients: Gradually fold the dry mixture into the wet mixture until just combined. Be careful not to overmix. If desired, fold in the chopped nuts and chocolate chips.

Spread and Bake: Pour the mixture into the prepared baking dish and spread it out evenly. Use a spatula to smooth the top.

Bake: Place the dish in the preheated oven and bake for about 20-25 minutes, or until the edges start to turn golden and a toothpick inserted in the center comes out clean.

Cool and Cut: Remove the dish from the oven and let it cool in the pan for about 10 minutes. Then, use the parchment overhang to lift it out and place it on a wire rack to cool completely. Once cooled, cut into bars of your desired size.

Store: Store the bars in an airtight container in the refrigerator for up to a week or freeze them for longer storage.
