Peanut Butter Cheesecake Brownies

For the Brownie Layer:

1 cup (226g) unsalted butter, melted

2 cups (400g) granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup (128g) all-purpose flour

1 cup (90g) unsweetened cocoa powder

1/2 teaspoon salt

1/2 teaspoon baking powder

For the Peanut Butter Cheesecake Layer:

8 oz (226g) cream cheese, softened

1/2 cup (120ml) creamy peanut butter

1/2 cup (100g) granulated sugar

1 large egg

1 teaspoon vanilla extract

A pinch of salt

Optional Topping:

1/2 cup (90g) chocolate chips

2 tablespoons peanut butter, melted, for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan and line it with parchment paper, leaving some overhang for easy removal.

    Prepare the Brownie Batter: In a large bowl, combine the melted butter and granulated sugar. Whisk until well combined. Add in eggs, one at a time, whisking thoroughly after each addition. Stir in the vanilla extract.

      Mix Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Gradually add the dry mixture to the wet ingredients, folding gently until just combined. Do not overmix.

        Pour the Brownie Layer: Pour the brownie batter into the prepared baking pan, spreading it evenly across the bottom.

          Make the Peanut Butter Cheesecake Filling: In another bowl, beat the cream cheese and granulated sugar together until smooth. Add the peanut butter, mixing until fully incorporated. Then add the egg, vanilla extract, and a pinch of salt, mixing until smooth and creamy.

            Layer the Cheesecake Mixture: Spoon the peanut butter cheesecake mixture over the brownie layer. Using a knife or a skewer, create a marbled effect by swirling the cheesecake layer into the brownie layer.

              Bake: Place the pan in the preheated oven and bake for 30-35 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs.

                Add Toppings (Optional): If using chocolate chips, sprinkle them over the top of the hot brownies as soon as they come out of the oven. Allow the brownies to cool for a few minutes and drizzle the melted peanut butter on top.

                  Cool and Serve: Let the brownies cool in the pan for at least 30 minutes before lifting them out using the parchment overhang. Cut into squares and enjoy!
