Ingredients

For the crust:

2 cups crushed pretzels

1/2 cup granulated sugar

1/2 cup unsalted butter, melted

For the cheesecake layer:

16 oz cream cheese, softened

1/2 cup granulated sugar

1/2 cup creamy peanut butter

2 large eggs

1 tsp vanilla extract

For the topping:

1 cup mini peanut butter cups, chopped

1/2 cup heavy cream

1 cup powdered sugar

1/4 cup creamy peanut butter

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal later.

Make the Pretzel Crust: In a medium bowl, combine the crushed pretzels, granulated sugar, and melted butter. Mix until well combined. Press the mixture evenly into the bottom of the prepared pan. Bake for 10 minutes, then remove and let cool.

Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and creamy. Gradually add the granulated sugar and peanut butter, mixing until combined. Add eggs one at a time, mixing just until incorporated. Finally, mix in the vanilla extract.

Add Peanut Butter Cups: Gently fold in the chopped mini peanut butter cups into the cheesecake mixture, being careful not to overmix.

Bake the Cheesecake Layer: Pour the cheesecake filling over the cooled pretzel crust, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly. Remove from oven and let cool to room temperature. Chill in the refrigerator for at least 3 hours, or until firm.

Make the Whipped Topping: In a mixing bowl, beat the heavy cream until soft peaks form. Gradually add powdered sugar and peanut butter, beating until stiff peaks form.

Assemble the Bars: Once the cheesecake has chilled and set, spread the whipped topping evenly over the cheesecake layer. Finish by sprinkling more chopped peanut butter cups on top for decoration.

Cut and Serve: Use the parchment overhang to lift the cheesecake out of the pan. Cut into squares and serve chilled. Enjoy your Peanut Butter Cup Pretzel Cheesecake Bars!
