Ingredients

1 ½ cups all-purpose flour

1 cup brown sugar, packed

½ cup granulated sugar

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

1 cup buttermilk (or milk + 1 tbsp lemon juice)

½ cup unsalted butter, melted and cooled slightly

2 large eggs

1 tsp vanilla extract

1 cup pecans, chopped (plus extra for topping)

½ cup corn syrup

¼ cup dark chocolate chips (optional for an indulgent twist)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with non-stick spray.

Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, and salt until well combined.

Wet Ingredients: In a separate bowl, mix together the buttermilk, melted butter, eggs, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; it’s okay if a few lumps remain.

Prepare Pecan Mixture: In a small bowl, mix chopped pecans with corn syrup and, if using, the dark chocolate chips. Gently fold this pecan mixture into the muffin batter until distributed evenly.

Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full. Sprinkle additional chopped pecans on top of each muffin for a crunchy finish.

Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Cool: Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Serve: Enjoy these delicious Pecan Pie Muffins warm, at room temperature, or even warmed slightly in the microwave!
