Ingredients
  

4 slices of whole-grain or sourdough bread

4 large eggs

1 cup fresh pesto (store-bought or homemade)

2 cups fresh arugula

1 tablespoon olive oil

Salt and pepper, to taste

Grated Parmesan cheese, for garnish (optional)

Cherry tomatoes, halved (for garnish, optional)

Instructions
 

Prepare the Toast:

    - Preheat a toaster or a grill pan over medium heat. Lightly brush the bread slices with olive oil on both sides.

      - Toast the bread until golden brown and crisp, approximately 3-4 minutes per side. Remove from heat and spread a generous layer of pesto on each slice while they are still warm.

        Cook the Eggs:

          - In a non-stick skillet over medium heat, add a little olive oil if necessary. Crack the eggs directly into the skillet.

            - Season with salt and pepper to taste. Cook the eggs sunny-side up for about 2-4 minutes or until the whites are set but the yolks are still runny. For a firmer yolk, you can cover the skillet with a lid for the last minute.

              Assemble the Toast:

                - While the eggs are cooking, pile a handful of fresh arugula on each pesto-covered slice of toast.

                  - Carefully place a cooked egg on top of the arugula on each piece of toast.

                    Garnish and Serve:

                      - If desired, sprinkle with grated Parmesan cheese and add halved cherry tomatoes for a fresh touch.

                        - Serve immediately while the toast is warm and the yolk is runny, perfect for dipping!
