8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

1 cup fresh basil leaves

1/4 cup pine nuts (toasted)

2 cloves garlic

1/2 cup grated Parmesan cheese

1/2 cup olive oil

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/4 tsp red pepper flakes (optional)

Fresh basil leaves for garnish

Lemon wedges for serving

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Make the Pesto: In a food processor, combine the basil leaves, toasted pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped. Slowly add olive oil while the processor is running until smooth and creamy. Season with salt and pepper to taste. If the pesto is too thick, add a tablespoon of reserved pasta water until you reach your desired consistency.

      Cook the Shrimp: In a large skillet over medium heat, drizzle a bit of olive oil. Add the shrimp and cook for about 2-3 minutes on each side or until the shrimp turns opaque and pink. Season with salt, pepper, and red pepper flakes if using.

        Combine Ingredients: Once the shrimp is cooked, add the cooked pasta right into the skillet with the shrimp. Pour the pesto over the top, stirring well to combine and coat the pasta and shrimp. If the mixture is too dry, add a bit of the reserved pasta water until you achieve your desired sauce consistency.

          Add Tomatoes: Gently fold in the cherry tomatoes, allowing them to warm through for a minute.

            Serve: Plate the pesto shrimp pasta immediately, garnishing with fresh basil leaves and additional Parmesan cheese if desired. Serve with lemon wedges on the side for an extra zing!
