Ingredients

12 large pierogi (potato and cheese or your favorite filling)

2 cups marinara sauce (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup sour cream

1/2 cup grated Parmesan cheese

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Sauté the Onions and Garlic: In a skillet, heat the olive oil over medium heat. Add the diced onions and sauté for about 5 minutes, until translucent. Add the minced garlic and cook for another minute until fragrant. Season with salt, pepper, oregano, and basil. Set aside.

Prepare the Cheese Mixture: In a medium bowl, combine the ricotta cheese, sour cream, and half of the grated Parmesan cheese. Mix well and season with salt and pepper to taste.

        Assemble the Lasagna:

          - Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.

            - Place four pierogi on top of the sauce.

              - Spread half of the cheese mixture over the pierogi, followed by a layer of sautéed onions and garlic.

                - Add another layer of marinara sauce on top of the onions.

                  - Repeat this process, adding another layer of four pierogi, half of the remaining cheese mixture, and more onions.

                    - Top with the final four pierogi, remaining marinara sauce, and sprinkle with shredded mozzarella and the rest of the Parmesan cheese.

Bake the Lasagna: Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, until the cheese is bubbly and golden.

Garnish and Serve: Once baked, let the lasagna cool for about 10 minutes. Serve warm, garnished with fresh parsley if desired.
