Ingredients

1 fresh pineapple, peeled, cored, and cut into 1-inch chunks

1 cup sugar

1 cup shredded cheddar cheese

2 cups crushed Ritz crackers (about 1 and ½ sleeves)

½ cup unsalted butter, melted

1 teaspoon ground cinnamon

1 tablespoon all-purpose flour

½ cup chopped pecans (optional)

¼ teaspoon salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Casserole Dish: Grease a 9x13 inch baking dish with butter or non-stick spray.

Mix Pineapple and Ingredients: In a large mixing bowl, combine the pineapple chunks, sugar, ground cinnamon, and flour. Toss well until the pineapple is evenly coated.

Layer the Casserole: Spread the pineapple mixture evenly in the prepared baking dish.

Prepare the Topping: In a separate bowl, combine the crushed Ritz crackers, melted butter, cheddar cheese, salt, and chopped pecans (if using). Mix until all the crackers are well coated.

Assemble and Top: Pour the cracker mixture evenly over the pineapple layer in your baking dish, pressing it down gently to create an even layer.

Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the pineapple is bubbly.

Cool and Serve: Let the casserole cool for about 10 minutes before serving. This dish can be enjoyed warm or at room temperature.
