Pineapple Chicken and Rice

Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup jasmine rice, rinsed

1 1/2 cups chicken broth

1 cup fresh pineapple, diced

1 bell pepper (red or yellow), chopped

1 cup snap peas, trimmed

3 cloves garlic, minced

1-inch piece ginger, grated

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon sesame oil

1 tablespoon vegetable oil

2 green onions, sliced (for garnish)

Salt and pepper to taste

Optional: chopped cilantro for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, honey, garlic, ginger, and a pinch of salt and pepper. Let it marinate for at least 15-30 minutes while you prepare the rest of the ingredients.

    Cook the Rice: In a medium saucepan, bring chicken broth to a boil. Add rinsed jasmine rice, reduce heat to low, cover, and let it simmer for about 15 minutes or until the rice is fluffy and the liquid is absorbed. Remove from heat and fluff with a fork.

      Sauté Vegetables: In a large skillet or wok, heat vegetable oil over medium-high heat. Add chopped bell pepper and snap peas, sautéing for about 3-4 minutes until tender-crisp.

        Cook the Chicken: Push the vegetables to the side of the skillet and add the marinated chicken to the center. Cook for about 6-8 minutes until the chicken is cooked through and browned, stirring occasionally.

          Combine Pineapple: Add the diced pineapple to the skillet and cook for an additional 2-3 minutes, allowing it to caramelize slightly and incorporate the flavors.

            Finish the Dish: Drizzle sesame oil over the chicken and vegetable mixture, then mix everything together until well combined. Taste and adjust seasoning if necessary.
