Ingredients

1 lb boneless, skinless chicken thighs (cut into bite-sized pieces)

1 cup fresh pineapple chunks (plus extra for garnish)

1/4 cup soy sauce

1/4 cup teriyaki sauce

2 tablespoons honey

1 tablespoon rice vinegar

2 cloves garlic (minced)

1 teaspoon fresh ginger (minced)

1 tablespoon sesame oil

2 cups cooked jasmine rice

1/4 cup green onions (sliced, for garnish)

1 tablespoon sesame seeds (toasted, for garnish)

Salt and pepper to taste

Optional: steamed broccoli or snap peas for added crunch

Instructions

Marinate the Chicken: In a medium bowl, combine the soy sauce, teriyaki sauce, honey, rice vinegar, minced garlic, and minced ginger. Add the cut chicken thighs to the bowl, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes, allowing the flavors to meld.

Cook the Chicken: In a large skillet or wok, heat the sesame oil over medium-high heat. Once hot, add the marinated chicken along with any remaining marinade. Cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Ensure the internal temperature reaches 165°F (75°C).

Add Pineapple: Once the chicken is almost cooked, add the fresh pineapple chunks into the skillet. Stir-fry everything together for an additional 2-3 minutes, allowing the pineapple to caramelize slightly and release its juices, enhancing the dish's flavor.

Prepare the Bowls: In individual serving bowls, place a generous scoop of cooked jasmine rice as the base. Top with the teriyaki chicken and sautéed pineapple mixture.

Garnish and Serve: Finish off the bowls with a sprinkle of sliced green onions and toasted sesame seeds. If desired, add steamed broccoli or snap peas for a crunchy contrast. Serve warm and enjoy your tropical taste experience!
