1 cup pineapple chunks (fresh or canned, drained)

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

2 large eggs

1 cup panko breadcrumbs

1/4 cup unsweetened shredded coconut (optional)

Vegetable oil, for frying

Sweet and sour sauce, for dipping

Optional garnish: chopped green onions or sesame seeds

Marinate the Chicken: In a medium-sized bowl, combine the chicken pieces with pineapple chunks. Allow them to marinate for about 15-30 minutes to absorb the pineapple flavor.

    Prepare the Coating: In a shallow dish, mix together the flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, beat the eggs until well combined. In a third bowl, combine the panko breadcrumbs and shredded coconut (if using).
