1 cup raw pistachios, shelled

1 cup pitted Medjool dates (about 12-15 dates)

1/2 cup dried cranberries

1/4 cup unsweetened shredded coconut

2 tablespoons chia seeds

1 tablespoon maple syrup (optional for extra sweetness)

1 teaspoon vanilla extract

A pinch of sea salt

Extra pistachios or coconut for rolling (optional)

Instructions
 

Prepare the Pistachios: In a food processor, add the shelled pistachios and pulse them until they’re finely chopped but not completely ground into a powder. You want some texture. Transfer to a bowl and set aside.

    Blend the Dates: In the same food processor, add the pitted Medjool dates, chia seeds, vanilla extract, maple syrup (if using), and a pinch of sea salt. Blend until the mixture is smooth and sticky; you may need to scrape down the sides occasionally.

      Combine Ingredients: In a large mixing bowl, combine the blended date mixture with the chopped pistachios, dried cranberries, and shredded coconut. Mix thoroughly using your hands or a spatula until everything is well incorporated.

        Form the Balls: With slightly damp hands, take about a tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture, placing the energy balls on a parchment-lined baking sheet.

          Optional Rolling: If desired, roll each ball in finely chopped pistachios or shredded coconut before placing them on the baking sheet to add an extra layer of flavor and texture.

            Chill the Energy Balls: Once all the energy balls are formed, place the baking sheet in the refrigerator for at least 30 minutes to firm up.
