Ingredients

4 bone-in pork chops (about 1 inch thick)

4 medium potatoes, thinly sliced

1 medium onion, thinly sliced

2 cups shredded cheddar cheese

1 can (10.5 oz) cream of mushroom soup

1 cup milk

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Season the pork chops with garlic powder, paprika, salt, and pepper. Add the chops to the skillet and sear for about 3-4 minutes on each side until they are golden brown. Remove them from the skillet and set aside.

Prepare the Potatoes and Onions: In a large mixing bowl, combine the sliced potatoes, onions, and half of the shredded cheddar cheese. Toss gently to mix everything evenly.

Make the Sauce: In a separate bowl, whisk together the cream of mushroom soup and milk until smooth. Season lightly with salt and pepper.

Assemble the Casserole: In a greased 9x13 inch baking dish, layer half of the potato and onion mixture. Place the seared pork chops on top, then pour half of the soup mixture over the chops. Add the remaining potato and onion mixture on top, followed by the rest of the soup mixture, ensuring everything is well covered.

Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 45 minutes.

Final Touches: After 45 minutes, remove the foil and sprinkle the remaining shredded cheddar cheese on top. Bake uncovered for an additional 15-20 minutes or until the cheese is bubbly and golden brown, and the potatoes are tender.

Serve: Remove from the oven and let it sit for 5 minutes before serving. Garnish with freshly chopped parsley for a pop of color.
