2 cups all-purpose flour

1 ½ cups granulated sugar

1 cup unsweetened applesauce

¾ cup vegetable oil

4 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

1 cup crushed pineapple, drained

1 cup shredded coconut

1 cup chopped pecans or walnuts (optional)

For the Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

2-3 tablespoons milk (to thin, if necessary)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    Mix the Dry Ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.

      Combine Wet Ingredients: In another bowl, mix the sugar, applesauce, vegetable oil, eggs, and vanilla extract until smooth and well combined.

        Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix. Fold in the crushed pineapple, shredded coconut, and chopped nuts, if using.

          Bake the Cake: Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
