Ingredients

2 cups elbow macaroni

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

2 cups cooked pulled pork (smoked or BBQ flavored)

3 cups sharp cheddar cheese, grated

1 cup cream cheese, softened

2 cups milk

1 teaspoon smoked paprika

1 teaspoon mustard powder

Salt and pepper to taste

1/2 cup breadcrumbs

2 tablespoons parsley, chopped (for garnish)

Instructions

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

      Sauté Aromatics:

        - In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

          Combine Pulled Pork:

            - Add the cooked pulled pork to the skillet, stirring to combine with the onions and garlic. Allow to heat through for about 2-3 minutes. Set aside.

              Make the Cheese Sauce:

                - In a large saucepan, over medium heat, combine the milk and cream cheese. Whisk continuously until the cream cheese is fully melted and well incorporated.

                  - Gradually add the grated sharp cheddar cheese, stirring until melted and smooth.

                    - Mix in the smoked paprika and mustard powder. Season with salt and pepper to taste.

                      Combine Everything:

                        - In a large bowl, mix the cooked macaroni with the cheese sauce until well coated. Fold in the pulled pork mixture until evenly distributed.

                          Prepare for Baking:

                            - Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased 9x13 inch baking dish.

                              - In a small bowl, combine the breadcrumbs with a tablespoon of olive oil, mixing until the breadcrumbs are coated. Sprinkle the seasoned breadcrumbs evenly over the top of the mac and cheese.

                                Bake:

                                  - Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.

                                    Serve:

                                      - Remove from the oven and let it cool for a few minutes. Garnish with chopped parsley before serving.
