Pumpkin Oat Bites with Maple Glaze

Ingredients
  

1 cup rolled oats

1/2 cup canned pumpkin puree

1/4 cup almond butter (or peanut butter)

1/3 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans) - optional

1/4 cup chocolate chips - optional (dairy-free if desired)

For the Maple Glaze:

1/2 cup powdered sugar

2 tablespoons maple syrup

1 tablespoon almond milk (or regular milk)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

    Mix the Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well-combined.

      Add Dry Ingredients: Slowly add the rolled oats, cinnamon, nutmeg, and salt to the wet mixture. Stir until the oats are fully incorporated. If you're using nuts or chocolate chips, fold them in now.

        Form the Bites: With your hands, scoop about 1 tablespoon of the mixture and form small balls or bites. Place them evenly spaced on the prepared baking sheet. Flatten each ball slightly with your palm.

          Bake: Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden. Allow them to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

            Prepare the Maple Glaze: While the bites are cooling, whisk together the powdered sugar, maple syrup, and almond milk in a small bowl until smooth. Adjust the milk to reach your desired consistency.

              Drizzle the Glaze: Once the oat bites have cooled, drizzle the maple glaze over the top using a spoon or a piping bag for a fun design.
