Ingredients

1 cup rolled oats

1/2 cup pumpkin puree (canned or fresh)

1/3 cup honey or maple syrup

1/4 cup almond butter (or any nut/seed butter of your choice)

1/2 teaspoon vanilla extract

1 teaspoon pumpkin spice (or mix of cinnamon, nutmeg, and ginger)

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup raisins or dark chocolate chips (optional)

1/4 cup chopped nuts (walnuts, pecans, or almonds, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, honey (or maple syrup), almond butter, and vanilla extract. Stir well until smooth.

Combine Dry Ingredients: In another bowl, mix the rolled oats, pumpkin spice, baking soda, and salt until evenly combined.

Combine Both Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If you are adding raisins or chocolate chips, fold them in along with the chopped nuts.

Shape the Cookies: Using a spoon or cookie scoop, drop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Press down gently to flatten the cookies slightly.

Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the cookies are golden around the edges. Leave them slightly soft in the center, as they will firm up as they cool.

Cool: Once baked, let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Serve these delicious pumpkin oat snack cookies warm or at room temperature. Store leftovers in an airtight container for up to a week.
