Ingredients

2 ½ cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

½ cup pumpkin puree (canned or fresh)

¼ cup whole milk, warmed to about 110°F

¼ cup granulated sugar

1 large egg

½ tsp salt

½ tsp ground cinnamon

¼ tsp ground nutmeg

¼ cup unsalted butter, melted

½ cup packed brown sugar

½ cup pecans, chopped

1 ½ tsp ground cinnamon (for filling)

1 cup cream cheese, softened (for icing)

2 cups powdered sugar (for icing)

1 tsp vanilla extract (for icing)

2-4 tbsp milk (for thinning icing, optional)

Instructions

Activate the Yeast: In a small bowl, combine the warm milk, granulated sugar, and yeast. Stir gently and let it sit for about 10 minutes until it becomes frothy.

Make the Dough: In a large mixing bowl, combine the flour, salt, ground cinnamon, and nutmeg. In another bowl, mix together the pumpkin puree, egg, and melted butter. Once the yeast is activated, add it to the pumpkin mixture. Stir to combine.

Combine Wet and Dry Ingredients: Gradually add the wet mixture to the dry ingredients, mixing with a wooden spoon until a dough forms. You may need to add a bit more flour if the dough is too sticky.

Knead the Dough: Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Form the dough into a ball and place it in a greased bowl. Cover with a kitchen towel and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Prepare the Filling: In a medium bowl, mix the brown sugar, chopped pecans, and 1 ½ tsp of ground cinnamon. Set aside.

Roll Out the Dough: After the dough has risen, punch it down to release the air. Roll it out on a floured surface into a rectangle, about 1/4 inch thick.

Spread the Filling: Brush the surface of the dough with melted butter, leaving a small border around the edges. Evenly sprinkle the cinnamon-pecan mixture over the dough.

Roll Up the Dough: Starting from one long edge, gently roll the dough into a tight log. Pinch the edges to seal the roll and use a sharp knife to cut it into 12 equal pieces.

Second Rise: Place the rolls in a greased baking dish or on a lined baking sheet, cover with a kitchen towel, and let them rise for another 30 minutes.

Preheat the Oven: Preheat your oven to 350°F (175°C).

Bake the Rolls: Bake the rolls for about 25-30 minutes, or until they are golden brown.

Make the Icing: While the rolls are baking, in a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract. If the icing is too thick, add milk one tablespoon at a time until you reach the desired consistency.

Frost the Rolls: Once the rolls have cooled slightly, spread the cream cheese icing over the top and serve warm.

Enjoy! These delicious pumpkin pecan cinnamon rolls are perfect for a cozy breakfast or as a sweet treat any time of the day.
