Ingredients

2 cups rolled oats

1 cup canned pumpkin puree

1 cup milk (dairy or non-dairy)

2 large eggs

1/3 cup maple syrup or honey

1/4 cup brown sugar (packed)

1 teaspoon vanilla extract

2 teaspoons pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans) (optional)

1/2 cup dried cranberries or chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish or line it with parchment paper for easier removal.

Mix the Wet Ingredients: In a large mixing bowl, combine the canned pumpkin puree, milk, eggs, maple syrup, brown sugar, and vanilla extract. Whisk until smooth and well combined.

Combine the Dry Ingredients: In another bowl, mix the rolled oats, pumpkin pie spice, baking powder, and salt. Stir to combine and break up any clumps of oats.

Combine Wet and Dry Mixtures: Gradually add the dry ingredients into the wet mixture, stirring gently until all the oats are coated and the mixture is well combined. If using, fold in the chopped nuts and dried fruit or chocolate chips.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish, and spread it out evenly with a spatula.

Bake: Bake in the preheated oven for 30-35 minutes or until the top is set and lightly golden. A toothpick inserted into the center should come out clean or with just a few moist crumbs.

Cool and Slice: Allow the baked oatmeal to cool for about 10 minutes in the dish, then use a spatula to lift it out onto a cutting board. Slice into squares.

Serve Enjoy: These squares can be served warm or at room temperature. Enjoy them as a breakfast option, snack, or even dessert! They also store well in an airtight container in the refrigerator for up to a week.
