1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

1 cup canned pumpkin puree

3/4 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1/3 cup vegetable oil

1/3 cup unsweetened applesauce

1 teaspoon pure vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a standard muffin tin with paper liners or grease with non-stick spray.

    Mix the Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt until well combined.

      Combine Wet Ingredients: In another bowl, combine the pumpkin puree, brown sugar, granulated sugar, eggs, vegetable oil, applesauce, and vanilla extract. Mix well until the mixture is smooth and creamy.

        Combine Wet and Dry Mixtures: Create a well in the center of the dry ingredients and pour in the wet mixture. Gently fold together using a spatula until just combined; be careful not to overmix as it may result in dense muffins.

          Add Optional Ingredients: If you're using walnuts or pecans and chocolate chips, fold them into the batter now.

            Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full to allow for rising.

              Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
