Pumpkin Stuffed Shells with Ricotta

20 jumbo pasta shells

1 cup ricotta cheese

1 cup canned pumpkin puree (not pumpkin pie filling)

1 tsp garlic powder

1 tsp onion powder

1 tsp dried oregano

1/2 tsp nutmeg

1/2 tsp salt

1/4 tsp black pepper

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cups marinara sauce

Fresh parsley, for garnish

Instructions
 

Preheat the Oven:

    Preheat your oven to 375°F (190°C).

      Cook the Pasta:

        In a large pot, bring salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

          Prepare the Filling:

            In a mixing bowl, combine the ricotta cheese, pumpkin puree, garlic powder, onion powder, dried oregano, nutmeg, salt, and black pepper. Mix until smooth and well combined.

              Stuff the Shells:

                Using a teaspoon or piping bag, carefully fill each jumbo seafood pasta shell with the pumpkin and ricotta mixture. Set aside.

                  Layer the Marinara Sauce:

                    In a 9x13 inch baking dish, spread 1 cup of marinara sauce evenly across the bottom.

                      Arrange the Stuffed Shells:

                        Place the stuffed shells seam side up in the baking dish on top of the sauce. Pour the remaining marinara sauce gently over the shells, ensuring they are well-coated.

                          Add the Cheese:

                            Sprinkle the shredded mozzarella cheese and grated Parmesan cheese generously over the top of the shells.

                              Bake:

                                Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 to 15 minutes, or until the cheese is bubbling and golden.

                                  Garnish and Serve:

                                    Once out of the oven, let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
