1 medium head of green cabbage, thinly sliced

2 large yellow onions, thinly sliced

3 tablespoons olive oil

2 tablespoons unsalted butter

1 tablespoon brown sugar

1 teaspoon salt

1/2 teaspoon black pepper

2 cloves garlic, minced

2 tablespoons apple cider vinegar

Fresh thyme leaves for garnish (optional)

Prepare the Vegetables: Start by carefully slicing the cabbage into quarters and removing the core. Proceed to slice the cabbage into thin ribbons. Slice the onions into thin rings or half-moons.

    Heat the Pan: In a large skillet, heat the olive oil and butter over medium heat. Allow the butter to melt fully, then swirl it with the oil.

      Cook Onions: Add the sliced onions to the skillet. Sprinkle with salt and cook for about 5-7 minutes, stirring occasionally, until they start to soften and turn translucent.

        Add Cabbage and Sugar: Next, add the sliced cabbage and brown sugar to the pan. Stir everything together until the cabbage is coated with the oil and sugar.

          Caramelize: Increase heat slightly to medium-high and continue cooking for about 15-20 minutes. Stir occasionally, allowing the cabbage and onions to caramelize beautifully. If they start to brown too quickly, reduce the heat and stir more frequently.

            Add Garlic and Vinegar: Once the vegetables are well caramelized and have a nice golden-brown color, add the minced garlic and apple cider vinegar. Stir and cook for an additional 2-3 minutes, until the garlic is fragrant and the vinegar has slightly evaporated.

              Season and Serve: Taste the mixture and adjust seasoning with additional salt and pepper if needed. Garnish with fresh thyme leaves if desired. Serve warm as a delicious side dish or topping for sandwiches.
