Ingredients
  

1 lb (450g) beef sirloin, sliced thinly against the grain

2 tbsp soy sauce

1 tbsp oyster sauce

1 tbsp cornstarch

2 tbsp vegetable oil (divided)

1 red bell pepper, sliced

1 cup snap peas, trimmed

3 green onions, chopped

2 cloves garlic, minced

1 tsp ginger, freshly grated

1 tsp sesame oil

1/2 tsp red pepper flakes (optional)

Cooked jasmine rice or noodles for serving

Instructions
 

Marinate the Beef: In a bowl, combine sliced beef, soy sauce, oyster sauce, and cornstarch. Mix well to ensure the beef is evenly coated. Let it marinate for at least 10 minutes (or up to 30 minutes for more flavor).

    Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

      Cook the Beef: Add the marinated beef to the pan in a single layer, ensuring not to overcrowd the pan. Let it sear without stirring for about 1-2 minutes until browned, then stir-fry for another 2-3 minutes until cooked through. Remove the beef from the pan and set aside.

        Sauté Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Stir in garlic and ginger, sauté for about 30 seconds until fragrant. Then, add the sliced bell pepper, snap peas, and a pinch of salt. Stir-fry for about 3-4 minutes until the vegetables are tender yet crisp.

          Combine Everything: Return the cooked beef to the pan, and incorporate it with the vegetables. Drizzle in sesame oil and sprinkle in red pepper flakes if you’re using them. Toss everything together for another minute to heat through and meld the flavors.

            Serve: Remove from heat and stir in the chopped green onions. Serve immediately over cooked jasmine rice or noodles for a complete meal.
