1 lb ground beef

1 cup uncooked white rice

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning (or homemade)

1 cup beef broth (or water)

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Rice: In a medium saucepan, rinse the rice under cold water. Add the rice and 2 cups of water (or as per package instructions). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed.

    Prepare the Beef: In a large skillet over medium heat, add olive oil. Once hot, add the ground beef, breaking it up with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

      Season the Beef: To the cooked beef, add the taco seasoning, garlic powder, onion powder, black beans, corn, and diced tomatoes (with their juices). Stir well to combine and cook for another 5 minutes, allowing the flavors to meld.

        Add the Rice: Fluff the cooked rice with a fork and add it to the skillet with the beef mixture. Pour in the beef broth, stirring until everything is well incorporated. If the mixture seems too dry, add a bit more broth or water to reach your desired consistency.

          Cheesy Delight: Reduce the heat to low and sprinkle the shredded cheddar cheese over the top of the mixture. Cover the skillet with a lid to allow the cheese to melt, about 2-3 minutes.
