1 lb ground beef (80/20)

1 small onion, diced

2 cloves garlic, minced

1 tbsp olive oil

1 tbsp taco seasoning

1/2 cup beef broth

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (cheddar or Mexican blend)

1 avocado, diced

Fresh cilantro, chopped (for garnish)

Fresh Salsa:

1 cup ripe tomatoes, diced

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Prepare the Salsa: In a medium bowl, combine the diced tomatoes, red onion, jalapeño, and cilantro. Squeeze lime juice over the mixture and add salt to taste. Stir gently to combine and set aside to let the flavors meld.

    Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
