200g fresh spinach, washed and drained

250g mushrooms, sliced (button or cremini)

2 cloves garlic, minced

1 small onion, finely chopped

2 tablespoons olive oil

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon balsamic vinegar

Salt and pepper, to taste

A pinch of red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and garlic. Sauté for about 2-3 minutes or until the onion becomes translucent and the garlic is fragrant.

    Cook the Mushrooms: Add the sliced mushrooms to the skillet and cook for an additional 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and tender.

      Add the Spinach: Gradually stir in the fresh spinach. It may seem like a lot at first, but it will wilt down significantly. Cook for about 2-3 minutes or until the spinach is bright green and heated through.
