12 oz spaghetti or pasta of choice

1 pint cherry tomatoes, halved

1 head of garlic, cloves separated and peeled

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1/4 cup fresh basil, chopped

1/4 cup grated Parmesan cheese (optional)

Zest of 1 lemon (for a fresh twist)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Garlic and Tomatoes: In a large mixing bowl, combine the halved cherry tomatoes and peeled garlic cloves. Drizzle with 2 tablespoons of olive oil, and add red pepper flakes, salt, and pepper. Toss to coat evenly.

      Roasting: Spread the tomato and garlic mixture on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until the tomatoes are blistered and soft, and the garlic is golden and fragrant.

        Cook the Pasta: While the tomatoes and garlic are roasting, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

          Combine: In a large skillet over medium heat, add the remaining tablespoon of olive oil. Once hot, add the roasted garlic and tomatoes (be careful, the garlic cloves may pop). Use a fork or spatula to smash the garlic slightly into the tomatoes.

            Mix with Pasta: Add the drained pasta to the skillet, along with a splash of reserved pasta water for a light sauce. Toss everything together until well combined. Taste and season with additional salt and pepper if needed.
