Quick Sourdough Pizza Dough

1 cup active sourdough starter (fed or unfed)

2 cups all-purpose flour (plus more for dusting)

1 teaspoon salt

1 tablespoon olive oil

1/2 cup warm water (about 110°F/43°C)

Optional: 1 teaspoon sugar (for a slightly sweeter crust)

Instructions
 

Combine Ingredients: In a large mixing bowl, combine the active sourdough starter, warm water, and olive oil. Whisk these ingredients together until well blended. If you are using sugar, add it at this stage.

    Add Flour and Salt: Gradually add the flour and salt to the mixture. Stir with a wooden spoon or spatula until a shaggy dough forms.

      Knead the Dough: Transfer the dough onto a lightly floured surface. Knead the dough for about 5-7 minutes until it becomes smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed.

        First Rise: Shape the kneaded dough into a ball and place it in a lightly oiled bowl. Cover the bowl with a damp cloth or plastic wrap and let it rest at room temperature for about 30-60 minutes, or until it has visibly puffed up.

          Preheat Oven: While the dough is rising, preheat your oven to the highest temperature (usually around 475°F or 245°C) and place a pizza stone or baking sheet inside to heat up.

            Shape the Pizza: After the dough has risen, punch it down gently to release the air. Divide the dough into two equal portions (for two pizzas). On a floured surface, stretch or roll out one portion to your desired thickness – remember to leave a slightly thicker edge for the crust!

              Topping Time: Transfer the rolled-out dough onto a piece of parchment paper or a floured pizza peel. Add your favorite sauce, cheese, and toppings.

                Bake: Carefully slide the dough onto the preheated pizza stone or baking sheet in the oven. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly and melted.

                  Cool and Serve: Once baked, remove the pizza from the oven and let it rest for a couple of minutes. Slice and enjoy your quick sourdough pizza!
