1 lb ground turkey

1 cup cooked brown rice (or quinoa)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 medium red bell pepper, diced

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade: cumin, chili powder, paprika, garlic powder, onion powder, salt)

1 tablespoon olive oil

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded lettuce

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sour cream or Greek yogurt (optional, for serving)

Cook the Ground Turkey: In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until fragrant and translucent, about 3-4 minutes. Add the ground turkey, breaking it apart with a spatula. Cook until browned and crumbly, about 6-8 minutes.

    Add Seasoning: Once the turkey is cooked, sprinkle the taco seasoning into the skillet. Add a splash of water (about 1/4 cup) to help distribute the spices evenly.
