Ingredients

1 lb (450g) boneless, skinless chicken breast, sliced thinly

2 cups mixed vegetables (bell peppers, snap peas, carrots)

3 cups cooked white or brown rice

1/4 cup teriyaki sauce (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon vegetable oil

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Instructions

Prepare the Chicken: Season the sliced chicken breast with salt and pepper. Set aside.

Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Sauté Garlic and Ginger: Add the minced garlic and ginger to the pan, stirring quickly for about 30 seconds until fragrant.

Cook Chicken: Add the seasoned chicken slices to the skillet. Cook for 5-7 minutes, stirring frequently, until the chicken is cooked through and no longer pink.

Add Vegetables: Stir in the mixed vegetables. Cook for an additional 3-4 minutes until veggies are tender-crisp.

Combine Sauces: Pour in the teriyaki sauce and soy sauce, stirring to coat the chicken and vegetables evenly. Cook for 2-3 more minutes to heat through.

Serve Over Rice: Divide the cooked rice among plates and top with the teriyaki chicken stir-fry mixture.

Garnish: Sprinkle with chopped green onions and sesame seeds before serving. Enjoy!
