1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

2 carrots, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

½ cup teriyaki sauce (store-bought or homemade)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Cooked jasmine rice or quinoa (for serving)

Instructions
 

Prepare the Chicken: In a bowl, toss the sliced chicken breasts with half of the teriyaki sauce, ensuring each piece is well-coated. Let it marinate for about 10 minutes while you prepare the vegetables.

    Heat the Oil: In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Cook the Chicken: Add the marinated chicken to the skillet in a single layer. Stir-fry for about 5-7 minutes, or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the skillet and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the minced garlic and ginger, tossing for about 30 seconds until fragrant. Then, add the sliced red bell pepper, broccoli florets, snap peas, and julienned carrots, stirring frequently for about 4-5 minutes, or until the vegetables are tender yet still crisp.

          Combine with Chicken: Return the cooked chicken to the skillet. Pour the remaining teriyaki sauce over the mixture and stir to combine. Cook for an additional 2-3 minutes, allowing the sauce to heat and slightly thicken.
