Quick Teriyaki Salmon with Steamed Rice

4 salmon fillets (about 6 oz each)

1/3 cup soy sauce (low sodium)

2 tablespoons rice vinegar

2 tablespoons honey or maple syrup

2 teaspoons sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 tablespoons green onions, chopped (plus more for garnish)

1 teaspoon sesame seeds (optional)

2 cups jasmine rice

4 cups water

Steamed broccoli or vegetables (optional, for serving)

Instructions
 

Prep the Teriyaki Sauce: In a medium bowl, whisk together the soy sauce, rice vinegar, honey (or maple syrup), sesame oil, minced garlic, and grated ginger until well combined. Set aside.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the teriyaki sauce over the salmon. Let it marinate for about 15-20 minutes, while you prepare the rice.

      Cook the Rice: Rinse the jasmine rice under cold water to remove excess starch. In a medium saucepan, combine the rinsed rice and 4 cups of water. Bring to a boil over medium-high heat. Once boiling, cover the pot, reduce the heat to low, and let it simmer for about 15 minutes or until all the water is absorbed. Remove from heat and let it sit, covered, for another 5 minutes.

        Cook the Salmon: Preheat a non-stick skillet over medium-high heat. Remove salmon from the marinade, letting excess glaze drip off. Add the salmon fillets skin-side down to the skillet. Cook for about 4-5 minutes, then flip and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork. You can brush some of the reserved teriyaki sauce over the top while cooking for added flavor.

          Prepare the Vegetables (optional): If you're using any vegetables like broccoli, steam them for 3-5 minutes or until tender while the salmon is cooking.

            Serve: Fluff the cooked jasmine rice with a fork and divide it among four bowls or plates. Place a salmon fillet on top of the rice in each serving. Drizzle the remaining teriyaki sauce over the salmon, sprinkle with chopped green onions and sesame seeds if desired. Serve with steamed vegetables on the side.
