1 lb (450g) chicken breast, thinly sliced

3 tablespoons vegetable oil

4 cloves garlic, minced

2 Thai red chilies, sliced (adjust to taste)

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon fish sauce

1 teaspoon sugar

1 bell pepper, sliced (preferably red or yellow for color)

1 cup fresh Thai basil leaves (or regular basil if unavailable)

Cooked jasmine rice, for serving

Instructions
 

Prep the Ingredients: Begin by preparing all your ingredients. Thinly slice the chicken breast and bell pepper, and mince the garlic. If you like it spicier, slice the Thai chilies beforehand so they are ready to add.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until it's hot but not smoking.

      Sauté Aromatics: Add the minced garlic and sliced chilies to the pan. Stir fry for about 30 seconds until fragrant, being careful not to burn the garlic.

        Cook Chicken: Add the sliced chicken breast to the skillet. Stir-fry for about 3-4 minutes or until the chicken is cooked through and no longer pink.

          Add Sauces: Pour in the soy sauce, oyster sauce, fish sauce, and sprinkle the sugar over the chicken. Stir well to combine the flavors, cooking for another 1-2 minutes.

            Incorporate Veggies: Add in the sliced bell pepper, stirring constantly for about 1-2 minutes until they are tender but still crisp.

              Finish with Basil: Remove the pan from heat and gently fold in the fresh Thai basil leaves. The residual heat will wilt the basil and infuse its flavor into the dish.
