Quick Veggie Stir-Fry with Teriyaki Chicken

1 lb chicken breast, thinly sliced

2 cups mixed bell peppers (red, yellow, green), sliced

1 cup broccoli florets

1 cup snap peas

2 cloves garlic, minced

1 tablespoon ginger, minced

3 tablespoons vegetable oil

1/2 cup teriyaki sauce (store-bought or homemade)

2 tablespoons sesame seeds (optional)

Cooked rice or noodles (for serving)

Salt and pepper, to taste

Green onions, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the sliced chicken breast with salt and pepper. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

    Cook the Chicken: Add the chicken to the skillet in a single layer. Sauté for 5-7 minutes, or until golden brown and cooked through. Remove chicken from the skillet and set aside.

      Sauté the Veggies: In the same skillet, add an additional tablespoon of oil if needed. Add the minced garlic and ginger, frying for about 30 seconds until fragrant. Then, toss in the mixed bell peppers, broccoli and snap peas. Stir-fry for 3-4 minutes until the veggies are bright and slightly tender.

        Combine Chicken and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour in the teriyaki sauce and stir well to combine. Cook for another 2-3 minutes, allowing the flavors to meld together and the sauce to lightly thicken.

          Serve: Remove from heat. If desired, sprinkle sesame seeds over the stir-fry. Serve immediately over cooked rice or noodles and garnish with chopped green onions.
