1 block (14 oz) firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 red bell pepper, sliced

1 small zucchini, sliced into half-moons

1 cup snap peas, trimmed

1 medium carrot, julienned

1 cup broccoli florets

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 green onions, chopped

1 tablespoon sesame seeds (for garnish)

Cooked rice or quinoa for serving

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. In a bowl, mix 1 tablespoon of soy sauce with the tofu cubes and gently toss. Allow it to marinate for about 10-15 minutes.

    Cook the Tofu: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the marinated tofu cubes and stir-fry for about 5-7 minutes, or until they are golden brown on all sides. Remove the tofu from the pan and set aside.

      Stir-Fry the Vegetables: In the same skillet, add the sesame oil. Add garlic and ginger, sautéing for about 30 seconds until fragrant. Then, add the sliced bell pepper, zucchini, snap peas, carrot, and broccoli. Stir-fry the vegetables for about 4-6 minutes until they are tender-crisp.

        Combine and Season: Return the cooked tofu to the pan, and add the remaining tablespoon of soy sauce. Toss everything together gently, ensuring the tofu and veggies are well coated. Cook for an additional 2 minutes.

          Serve: Remove the stir-fry from heat. Transfer to bowls, garnish with chopped green onions and sesame seeds. Serve hot over cooked rice or quinoa.
