Rainbow Veggie Pizza

For the Pizza Dough:

2 ¼ teaspoons active dry yeast (1 packet)

1 cup warm water (about 110°F/43°C)

3 cups all-purpose flour

1 teaspoon sugar

1 teaspoon salt

2 tablespoons olive oil

For the Sauce:

1 cup crushed tomatoes (canned)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Toppings:

1 cup shredded mozzarella cheese

½ cup sliced red bell pepper

½ cup sliced yellow bell pepper

½ cup sliced green bell pepper

½ cup shredded red cabbage

½ cup sliced carrots

½ cup cherry tomatoes, halved

¼ cup black olives, sliced

Fresh basil leaves for garnish

Extra virgin olive oil (for drizzling)

Instructions
 

Prepare the Dough:

    - In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5–10 minutes until frothy.

      - In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.

        - Knead the dough on a floured surface for about 5–7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

          Make the Sauce:

            - In a saucepan, heat a drizzle of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute.

              - Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Let simmer for 15 minutes. Remove from heat and set aside.

                Preheat the Oven:

                  - Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet to heat.

                    Assemble the Pizza:

                      - After the dough has risen, punch it down and roll it out on a floured surface into your desired shape (round or rectangular).

                        - Transfer the rolled-out dough to a parchment-lined baking sheet or a pizza peel if using a stone.

                          - Spread an even layer of the tomato sauce over the dough, leaving a small border around the edges.

                            - Sprinkle the shredded mozzarella cheese over the sauce.

                              - Artistically arrange the sliced veggies on top of the cheese to create a vibrant rainbow effect.

                                Bake the Pizza:

                                  - Carefully transfer the pizza to the preheated oven (or onto the heated pizza stone). Bake for about 12–15 minutes, or until the crust is golden and the cheese is bubbling.
