Raspberry Almond Thumbprint Bars

For the crust:

1 ¾ cups almond flour

½ cup rolled oats

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, melted

¼ cup maple syrup or honey

1 teaspoon vanilla extract

For the raspberry filling:

1 ½ cups fresh raspberries (or frozen, thawed)

2 tablespoons honey or maple syrup

1 tablespoon cornstarch

1 teaspoon lemon juice

For the topping:

½ cup sliced almonds

1 tablespoon almond slivers (optional for garnish)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal of the bars.

    Prepare the Crust: In a mixing bowl, combine the almond flour, rolled oats, baking powder, and salt. Stir until well combined. In another bowl, mix together the melted butter, maple syrup (or honey), and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until a crumbly dough forms.

      Press the Crust: Take about two-thirds of the mixture and press it firmly into the bottom of the prepared baking dish to form an even layer. Use a spatula or your fingers to ensure it’s compact.

        Make the Raspberry Filling: In a small saucepan over medium heat, combine the raspberries, honey (or maple syrup), cornstarch, and lemon juice. Stir gently while cooking, just until the raspberries break down and the mixture thickens slightly. This should take about 5 minutes. Remove from heat and let cool for a few minutes.

          Assemble the Bars: Pour the raspberry filling over the crust, spreading it out evenly. Sprinkle the remaining crumb mixture over the top, then top with sliced almonds for added crunch.

            Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and the edges are bubbling. Keep an eye on it to prevent burning.

              Cool & Slice: Once baked, remove from the oven and let it cool completely in the pan on a wire rack. After cooling, use the parchment overhang to lift the bars out of the pan. Cut into squares or rectangles and garnish with almond slivers if desired.
