12 jumbo pasta shells

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup diced bell pepper (any color)

1 can (15 oz) diced tomatoes with herbs (drained)

1 cup sour cream

1 cup ricotta cheese

1 cup shredded mozzarella cheese (divided)

1 cup grated Parmesan cheese (divided)

1 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Pasta: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to the package instructions until al dente. Drain and set aside to cool.

      Prepare the Beef Filling: In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned, breaking it up with a spoon. Drain excess fat.

        Add Vegetables: To the skillet, add the diced bell pepper and cook for an additional 3-4 minutes until softened. Stir in the drained diced tomatoes, Italian seasoning, and season with salt and pepper. Remove from heat and let it cool slightly.
